You will also cover yeasted breads, succulent focaccia, pliable chapattis and sourdough crumpets. You’ll leave full of enthusiasm for gluten-free bread, with lots of bakes to enjoy over the coming days and some gluten-free sourdough starter to nurture.

Fermenting and the Happy Gut

with Naomi Devlin from the River Cottage 

 

Learn to safely ferment vegetables and create delicious probiotic drinks to help support your gut microbiome, soothe inflammation and boost immunity.

 

You will also look at ways to increase your intake of probiotics, anti-inflammatories and deliciousness - wherever you are on the gut health spectrum. Your gut is as individual as you are, so you'll look at how to listen to it (and not just those weird noises it makes when you’re somewhere quiet) and use that information to keep it comfy and regular.

 

You’ll make your own lunch on this course and take home some digestive bitters, ferments and some gut-friendly treats to enjoy when nobody’s looking.

Gluten-Free Patisserie

with Naomi Devlin from the River Cottage

 

Join Naomi for an indulgent day of gluten-free patisserie! You’ll make puff pastry and an elegant galette, choux buns which you’ll fill with cream and cover with ganache.

 

Naomi will show you how to make an enriched bread that you can turn into a brioche loaf or some cinnamon swirls or cardamom buns. She’ll also demonstrate how to make an airy chocolate genoise sponge and transform it into a many layered gateau for you to take home in your party bag.

 

Lunch is included in the price and you’ll take home your galette, spare puff pastry, enough profiteroles for the family and a hefty slice of the gateau you will create together. She will talk you through all the flours and techniques you use and the group will be small enough that you’ll get total hands on teaching.

You’ll also make some wholegrain shortcrust pastry and some yummy pasties, pasta from scratch and a batch of delicious cookies. You’ll leave full of enthusiasm for gluten-free bread, pastry and pasta and some gluten-free sourdough starter to nurture too.

Gluten-Free Noodles and Dumplings

with Naomi Devlin from the River Cottage

 

Noodles and dumplings are the essence of comfort food - from a broth bowl of ramen and a plate of sticky gyoza dumplings, to a bowl of freshly made pasta and some fluffy gnocchi - they bring joy whoever you are!

 

On this action-packed day, you’ll make soba noodles from scratch and put together a ramen bowl for lunch. Then you’ll turn your hand to pleated dumplings (gyoza) which you’ll cook up as pot stickers, filled with umami.

 

You’ll also make beautiful potato gnocchi to take home for supper and finally you’ll all make a couple of date pastries - perfect balls of chestnut pastry, filled with a mixture of date and cardamom, rolled in sugar and baked. 

 

The course can be suitable for dairy free, vegetarian, nut free and low FODMAP diets, but not egg free or vegan.
